"Gulliver's Corn"Ingredients:
2 Pkgs (20oz) Frozen Corn
1/2 Pint (8oz)Heavy Whipping Cream
1/2 Pint (8oz) Homogenized Milk
6 Tsp Sugar or to Taste
pinch White Pepper or Cayenne Pepper
2 Tblsp Melted Butter
2 Tblsp Flour
Salt to Taste
Grated Parmesan Cheese
Combine all ingredients except flour, butter and parmesan
cheese in a pot and bring to a boil. Simmer 5 minutes. Blend
melted butter with the flour and add to the corn, mix well and
remove from heat. Put finished corn in a heat proof casserole
dish and sprinkle the whole top with parmesan cheese and place
under broiler until browned. Serves 8

"Orzo Fruit Salad"Ingredients:
2 - 11oz Cans Mandarin Oranges
2 - 20oz Cans Chunk Pineapple
1/2 Pkg Ronzoni Orzo (Cooked and Drained)
3/4 Cp Granulated Sugar
2 Eggs (well beaten)
2 Rounded Tblsp Flour
1/2 Tsp Salt
1 6oz Cool Whip
Drain fruit and add sugar to the juice. Beat in eggs, flour
and salt. Put it all into a saucepan and heat until mixture
comes to a boil, stir until thickened. Pour over fruit and
drained cooled orzo. Mix and refrigerate overnight. Add Cool
Whip and blend. Makes 3 Quarts.

"Microwave Peanut Brittle"Ingredients:
1 Cp Sugar
1 Tsp Butter
1 Tsp Vanilla Flavoring
1/2 Cp Karo White Syrup
1 3/4 Cps Unsalted Peanuts
1 Tsp Baking Soda
Cook sugar and Karo syrup for 4 minutes in the microwave on
high. Add the nuts and stir with a wooden spoon and cook
another 4 minutes. Add the butter and vanilla. Slowly add the
baking soda until foaming. Pour onto an oiled cookie sheet.
Let it sit at room temperature and when it hardens break into
bite size pieces. |
"Apple Cake"Ingredients:
4 Tbsp Butter or Margarine
1 Egg, Beaten
1 Cp Flour
1/2 Tsp Nutmeg
3 Cps Apples, peeled, cored and diced
1/4 Cps Chopped Nuts
1 Tsp Vanilla
1 Cp Sugar
1 Tsp Baking Soda
1/2 Tsp Cinnamon
1/2 Tsp Salt
1/2 Cp Raisins
Mix butter and sugar, add beaten egg. Mix together the
baking soda, flour and spices and add to the creamed butter
mixture. Stir in diced apples, nuts and vanilla. Pour into a
8x8x2 greased pan. Bake at 350 degrees for until it tests
done. Serve with a whipped topping or ice cream.
